Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup cream or milk
  • 1 cup mixed vegetables (peas, carrots, etc.)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant, about 3–4 minutes.
  2. Stir in the rice and cook for 1 minute, allowing it to coat in the oil and absorb the flavors from the onion and garlic.
  3. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for about 15 minutes or until the rice is fully cooked and has absorbed the liquid.
  4. Once the rice is cooked, stir in the cream, shredded chicken, and mixed vegetables. Season with salt and pepper, and cook for an additional 5 minutes until everything is heated through. Garnish with fresh parsley before serving.
