- 2 cups cooked chicken, shredded
- 1 cup rice
- 2 cups chicken broth
- 1 cup cream or milk
- 1 cup mixed vegetables (peas, carrots, etc.)
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant, about 3–4 minutes.
- Stir in the rice and cook for 1 minute, allowing it to coat in the oil and absorb the flavors from the onion and garlic.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for about 15 minutes or until the rice is fully cooked and has absorbed the liquid.
- Once the rice is cooked, stir in the cream, shredded chicken, and mixed vegetables. Season with salt and pepper, and cook for an additional 5 minutes until everything is heated through. Garnish with fresh parsley before serving.
