Description

Delightful and moist pumpkin muffins with a rich pumpkin spice aroma, perfect for breakfast or snacks.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. Combine the pumpkin puree, sugar, vegetable oil, and eggs in a mixing bowl and mix until smooth.
  3. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in another bowl.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Spoon the batter into muffin cups, filling each about 2/3 full.
  5. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool in the pan before transferring to a wire rack.

Notes

Serve warm or at room temperature. Can be dusted with powdered sugar or served with cream cheese frosting.
