Ingredients

  • 1 lb pork tenderloin
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Season the pork tenderloin generously with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned, about 2-3 minutes per side.
  3. Transfer the skillet to the oven and roast the pork for 15-20 minutes until the internal temperature reaches 145°F (63°C).
  4. Return the skillet to the stove, add Dijon mustard and heavy cream, and stir to combine, cooking over low heat until warmed through, about 3-5 minutes.
  5. Remove the pork from the oven, let it rest for a few minutes, then slice and serve with the Dijon cream sauce drizzled over the top.

Notes

Searing the pork adds depth to the flavor. Use a meat thermometer for perfect doneness.
