Description

Delightful macarons combining the delicate texture of a macaron with the rich, nutty flavor of pistachios, perfect for any occasion.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1 cup heavy cream
  • 8 oz white chocolate, chopped
  • 1/2 cup pistachios, finely ground
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Combine almond flour and powdered sugar, then sift together to remove lumps. In a separate bowl, whip egg whites until foamy. Add cream of tartar and gradually add granulated sugar, whipping until stiff peaks form.
  3. Fold the sifted almond flour mixture into the whipped egg whites. Add vanilla extract and food coloring if desired. Pipe small circles onto the prepared baking sheets. Let the macarons sit at room temperature for 30-60 minutes until a skin forms. Bake for 15-20 minutes, then let them cool completely.
  4. Heat heavy cream until just boiling, then pour it over the chopped white chocolate. Stir until smooth and creamy, then mix in the ground pistachios. Let the ganache cool until it thickens, then fill half of the macaron shells with it and sandwich with the other half.

Notes

For best results, age the egg whites and avoid overmixing the batter. Store macarons in an airtight container in the refrigerator for up to a week.
