Instructions
- If using gelatin, begin by dissolving it in cold water and letting it sit for about 5 minutes to bloom. After blooming, gently heat it until fully dissolved, ensuring it doesn’t boil.
- In a blender, combine the pineapple chunks, coconut cream, and sugar. Blend until smooth and creamy, allowing all flavors to meld together.
- In a separate large bowl, whip the heavy cream and vanilla extract until soft peaks form. This adds lightness to the mousse and creates a delightful texture.
- Gently fold the pineapple and coconut mixture into the whipped cream until well combined. If using gelatin, add it at this stage, ensuring it’s fully incorporated without deflating the whipped cream.
- Transfer the mousse to serving dishes or a large bowl and refrigerate for at least 2 hours until set. This chilling time allows the flavors to deepen and the texture to stabilize.
