Ingredients
Scale
- 2 cups cooked rice
- 1 lb chicken breast, cubed
- 1 can (20 oz) pineapple chunks, drained
- 1 red bell pepper, diced
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken, seasoning with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add the diced red bell pepper and minced garlic to the skillet. Cook for an additional 2-3 minutes until the vegetables are tender.
- Stir in the pineapple chunks and soy sauce, allowing everything to combine nicely. Cook for another 2 minutes to heat everything through.
- Serve the pineapple chicken over the cooked rice. Don’t forget to garnish with green onions for a fresh touch!
Notes
For extra flavor, marinate the chicken in soy sauce and garlic for 30 minutes before cooking. You can use brown rice for a healthier option or quinoa as a gluten-free alternative.
