- 2 pounds ground beef
- 1 cup breadcrumbs
- 1 egg
- ½ cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 green bell pepper, diced
- 1 small onion, diced
- 1 tablespoon olive oil
- 8 slices provolone cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Sauté the diced green bell pepper and onion for about 5 minutes until they’re nicely softened. Once done, set them aside.
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and black pepper. Mix gently until everything is well combined – but be careful not to overwork the meat!
- Pack half of the meat mixture tightly into a loaf pan. Layer it with 4 slices of provolone cheese followed by the sautéed vegetables. Top it off with the remaining meat mixture, pressing it down gently to ensure it’s packed well.
- Place the loaf pan in the preheated oven and bake for 45-50 minutes until the meatloaf is fully cooked. In the last 5 minutes of baking, add the remaining cheese slices on top to melt beautifully.
- Once baked, remove the meatloaf from the oven and let it rest for about 5-10 minutes before slicing.
Notes
Slice and serve with creamy mashed potatoes, roasted vegetables, or a crisp salad. Consider adding gravy or serving on a bun for a sandwich.
