- 8 ounces penne pasta
- 1 cup ricotta cheese
- 1 cup fresh tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Heat a small amount of olive oil in a large skillet over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the diced tomatoes to the skillet and cook for 2-3 minutes until they begin to soften, allowing their juices to blend.
- Lower the heat and stir in the ricotta cheese, mixing until smooth. Then add the cooked penne to the skillet and toss until well coated. Stir in the chopped basil and season with salt and pepper. Serve warm, drizzled with additional olive oil if desired.
Notes
For added flavor, garnish with fresh basil or grated Parmesan. Store leftovers in an airtight container for up to 3 days.
