Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup chopped pecans
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  3. Mix the buttermilk, vegetable oil, egg, and vanilla extract in another bowl until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped pecans gently.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Let cool before transferring to a wire rack.
