- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup chopped pecans
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt in a large bowl.
- Mix the buttermilk, vegetable oil, egg, and vanilla extract in another bowl until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped pecans gently.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Let cool before transferring to a wire rack.
