Description

A delightful and colorful dish that combines feta cheese and dried cranberries, perfect for summer picnics or as a refreshing side dish.


Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, diced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Once cooked, drain and let it cool completely.
  2. In a large bowl, combine the cooled pasta, crumbled feta cheese, dried cranberries, and diced red onion. Stir gently to mix the ingredients.
  3. Whisk together olive oil, fresh lemon juice, Dijon mustard, and a pinch of salt and pepper in a small bowl until well combined.
  4. Pour the dressing over the pasta salad and toss everything together until the pasta is evenly coated. Garnish with fresh parsley before serving. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of olive oil or lemon juice if the salad becomes too dry before serving.
