- 2 chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 cloves garlic, minced
- 1/2 cup flour
- 2 eggs, beaten
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- 1 tablespoon butter
- Parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the breadcrumbs, grated Parmesan cheese, minced garlic, salt, and pepper in a shallow dish.
- Dredge each chicken breast in flour, shaking off the excess.
- Dip the chicken into the beaten eggs, coating it completely.
- Press the chicken into the breadcrumb mixture for a thick coating.
- Heat the olive oil in a skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken breasts to a baking dish and bake for 20-25 minutes or until cooked through.
- Add the butter and heavy cream to the same skillet, stirring to blend into a garlic sauce.
- Pour the garlic sauce over the baked chicken, garnish with parsley, and serve hot.
Notes
For extra crunch, consider adding crushed cornflakes to the breadcrumb mixture. Allow the chicken to rest after baking to keep the juices locked in.
