One Pot Greek Orzo

Description

A delightful dish capturing vibrant Greek flavors in a simple, comforting meal with orzo pasta, fresh vegetables, and feta cheese.


Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.
  2. Stir in the orzo pasta and sauté for a couple of minutes until the pasta is slightly toasted.
  3. Add the vegetable broth, halved cherry tomatoes, and oregano to the pot. Bring to a boil, then reduce the heat. Let it simmer uncovered for about 10 minutes.
  4. Stir in the chopped spinach, sliced olives, and crumbled feta cheese. Allow it to cook for an additional 2 minutes until the spinach has wilted. Season with salt and pepper to taste before serving.

Notes

Serve warm, garnished with additional feta or a drizzle of olive oil. Pairs well with a green salad or crusty bread.
