Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 can coconut milk
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken pieces and season generously with salt and pepper. Cook until browned, about 5-7 minutes.
  3. Once the chicken is browned, add the minced garlic and ginger. Stir for about a minute until fragrant.
  4. Pour in the coconut milk and lime juice, followed by the soy sauce. Stir to combine.
  5. Allow the mixture to simmer for about 10-15 minutes, until the chicken is fully cooked through and tender.
  6. Before serving, garnish your dish with chopped cilantro.
