Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken pieces and season generously with salt and pepper. Cook until browned, about 5-7 minutes.
- Once the chicken is browned, add the minced garlic and ginger. Stir for about a minute until fragrant.
- Pour in the coconut milk and lime juice, followed by the soy sauce. Stir to combine.
- Allow the mixture to simmer for about 10-15 minutes, until the chicken is fully cooked through and tender.
- Before serving, garnish your dish with chopped cilantro.
