Description

Delicious cookies made without added sugars and traditional flours, perfect for low-carb and gluten-free diets.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup natural peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the almond flour, cocoa powder, baking soda, and pinch of salt in a mixing bowl.
  3. Mix the peanut butter, honey, and vanilla extract in another bowl until smooth.
  4. Gradually add the dry ingredients to the wet mixture until well combined.
  5. Fold in the dark chocolate chips if using.
  6. Drop spoonfuls of the dough onto a lined baking sheet, leaving space between each cookie.
  7. Bake for about 10-12 minutes until set.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks. For longer storage, freeze them for up to 3 months.
