Ingredients

- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup natural peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 cup dark chocolate chips (optional)
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the almond flour, cocoa powder, baking soda, and pinch of salt in a mixing bowl.
- Mix the peanut butter, honey, and vanilla extract in another bowl until smooth.
- Gradually add the dry ingredients to the wet mixture until well combined.
- Fold in the dark chocolate chips if using.
- Drop spoonfuls of the dough onto a lined baking sheet, leaving space between each cookie.
- Bake for about 10-12 minutes until set.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks. For longer storage, freeze them for up to 3 months.
