Description

A refreshing no-bake dessert that combines the flavors of coconut and pineapple in a creamy mousse.


Ingredients

  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup coconut cream
  • 1 teaspoon vanilla extract
  • Graham cracker crumbs (for garnish)
  • Pineapple slices (for garnish)

Instructions

  1. Beat the heavy cream until stiff peaks form in a large bowl.
  2. Mix the softened cream cheese and powdered sugar until smooth in another bowl.
  3. Add the crushed pineapple, coconut cream, and vanilla extract to the cream cheese mixture and stir until well combined.
  4. Fold in the whipped cream gently until fully incorporated.
  5. Spoon the mixture into serving cups or bowls and chill for at least 120 minutes.
  6. Garnish with graham cracker crumbs and pineapple slices before serving.

Notes

For best results, chill the mousse for at least 2 hours to allow flavors to meld. Store leftovers in an airtight container in the refrigerator for up to three days.
