- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup crushed pineapple, drained
- 1/4 cup coconut cream
- 1 teaspoon vanilla extract
- Graham cracker crumbs (for garnish)
- Pineapple slices (for garnish)
Instructions
- Beat the heavy cream until stiff peaks form in a large bowl.
- Mix the softened cream cheese and powdered sugar until smooth in another bowl.
- Add the crushed pineapple, coconut cream, and vanilla extract to the cream cheese mixture and stir until well combined.
- Fold in the whipped cream gently until fully incorporated.
- Spoon the mixture into serving cups or bowls and chill for at least 120 minutes.
- Garnish with graham cracker crumbs and pineapple slices before serving.
Notes
For best results, chill the mousse for at least 2 hours to allow flavors to meld. Store leftovers in an airtight container in the refrigerator for up to three days.
