A delightful no-bake cheesecake mousse that combines tropical flavors of piña colada for a refreshing and creamy dessert.


Ingredients

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut cream
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded coconut (optional)
  • Graham cracker crumbs (for serving)

Instructions

  1. Beat the softened cream cheese until smooth in a large bowl.
  2. Gradually add in the powdered sugar and mix until well combined.
  3. Whip the heavy cream in a separate bowl until soft peaks form.
  4. Fold the whipped cream into the cream cheese mixture gently.
  5. Stir in the crushed pineapple, coconut cream, and vanilla extract.
  6. Mix until all ingredients are combined.
  7. Spoon the mousse into serving dishes and refrigerate for at least 2 hours.
  8. Serve topped with shredded coconut and graham cracker crumbs.

Notes

For a stronger coconut flavor, consider adding coconut extract. Can be made a day in advance for deeper flavors.
