Ingredients

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 package graham crackers
  • 1/2 cup melted butter

Instructions

  1. Beat the cream cheese until smooth.
  2. Gradually add the powdered sugar to the cream cheese mixture.
  3. Whip the heavy cream in another bowl until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture gently.
  5. Stir in the lemon juice, lemon zest, and vanilla extract.
  6. Combine the crushed graham crackers with melted butter.
  7. Press the graham cracker mixture into the bottom of a lined dish.
  8. Pour the cheesecake mixture over the crust and spread evenly.
  9. Refrigerate for at least 4 hours, or until set.
