Description

Ingredients

  • 1 lb steak (such as sirloin or flank)
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the steak with salt and pepper. Grill or pan-sear the steak over medium-high heat for 4-5 minutes per side, or until cooked to your desired doneness. Let it rest before slicing.
  2. Combine the cooked quinoa, cherry tomatoes, cucumber, red onion, red bell pepper, feta cheese, and olives in a large bowl. Stir gently to mix.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl. Pour this dressing over the quinoa mixture and toss to combine.
  4. Divide the quinoa salad among bowls, top with sliced steak, and garnish with chopped parsley. Serve immediately.

Notes

For a vegan option, substitute the steak with marinated grilled tofu or chickpeas. Store leftovers in an airtight container in the refrigerator for up to 3 days.
