Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
  2. Add fresh shrimp and cook until they turn pink, about 2-3 minutes on each side.
  3. Toss in cherry tomatoes and Kalamata olives; stir gently to combine and heat through.
  4. Drizzle with fresh lemon juice and season with salt, pepper, and red pepper flakes if desired. Cook for an additional 1-2 minutes to meld flavors. Remove from heat and garnish with chopped parsley before serving.
