- 1 pound fresh shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
- Add fresh shrimp and cook until they turn pink, about 2-3 minutes on each side.
- Toss in cherry tomatoes and Kalamata olives; stir gently to combine and heat through.
- Drizzle with fresh lemon juice and season with salt, pepper, and red pepper flakes if desired. Cook for an additional 1-2 minutes to meld flavors. Remove from heat and garnish with chopped parsley before serving.
