- 2 large russet potatoes
- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 avocado, diced
- 1/2 cup pico de gallo
- Jalapeños, sliced (optional)
- Fresh cilantro (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce the russet potatoes with a fork to ensure they bake evenly. Wrap each potato in foil and place them on a baking sheet. Bake them for about 45 minutes or until they are tender when pierced with a fork.
- While the potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey and cook it until browned, breaking it apart with a spatula as it cooks. Once browned, drain any excess fat, then add the taco seasoning. Follow package instructions to combine with water or other ingredients if required.
- After the potatoes are baked, remove them from the oven and allow them to cool slightly for easier handling. Cut each potato in half lengthwise. Scoop a small portion out of the center of each half to create a bowl, being careful not to break the skin.
- Scoop the seasoned taco beef into each potato bowl, then fill with black beans, corn, and shredded cheese. Return the filled potato bowls to the oven for 5-10 minutes, just until the cheese melts deliciously. Finally, take them out and top with sour cream, diced avocado, pico de gallo, jalapeños, and fresh cilantro as desired.
