  • Zest of 2 lemons
  • Additional granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, powdered sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by stirring in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Add the dry mix to the wet ingredients, alternating with the lemon juice and zest.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Roll the chilled dough into balls and roll in granulated sugar.
  8. Place on a parchment-lined baking sheet and flatten slightly.
  9. Bake for 10-12 minutes or until lightly golden.
  10. Let cool on a wire rack.
