Juicy chicken thighs marinated in a bright and zesty lemon and garlic mixture, perfect for a weeknight dinner or a special gathering.


Ingredients

  • 6 skin-on, bone-in chicken thighs
  • Juice of 2 fresh lemons
  • Zest of 1 lemon
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup chicken broth

Instructions

  1. Combine lemon juice, lemon zest, olive oil, minced garlic, oregano, salt, and pepper to create the marinade in a mixing bowl.
  2. Add chicken thighs to the marinade and coat thoroughly. Cover and refrigerate for at least 30 minutes or overnight for best results.
  3. Preheat your oven to 425°F (220°C). Heat a skillet over medium-high heat with olive oil. Sear chicken thighs skin-side down for 3-4 minutes until golden brown.
  4. Transfer seared chicken to a baking dish; pour remaining marinade and broth around it. Bake for 20-25 minutes until the internal temperature reaches 165°F (75°C). Allow chicken to rest for 5 minutes before serving.

Notes

Marinate longer for more intense flavor. Ensure skillet is hot enough for a nice crust.
