Description

Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh dill (or 1 tablespoon dried dill)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Whisk together the olive oil, lemon juice, dill, minced garlic, and a pinch of salt and pepper.
  3. Place the cod fillets in the prepared baking dish and pour the lemon-dill mixture evenly over the fillets.
  4. Bake for 15-20 minutes until the fish flakes easily with a fork.
  5. Serve hot with lemon wedges on the side.

Notes

For the best flavor, use fresh dill when possible. Don’t overcook the cod, and consider adding a pinch of red pepper flakes for extra heat.
