- 4 cod fillets
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons fresh dill (or 1 tablespoon dried dill)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
- Whisk together the olive oil, lemon juice, dill, minced garlic, and a pinch of salt and pepper.
- Place the cod fillets in the prepared baking dish and pour the lemon-dill mixture evenly over the fillets.
- Bake for 15-20 minutes until the fish flakes easily with a fork.
- Serve hot with lemon wedges on the side.
Notes
For the best flavor, use fresh dill when possible. Don’t overcook the cod, and consider adding a pinch of red pepper flakes for extra heat.
