- 1/2 cup powdered sugar
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for rolling

- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.
- Stir in lemon zest and lemon juice to infuse the cookie dough with flavor.
- Gradually add in the flour and salt, mixing until just combined.
- Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes or until the edges are slightly golden.
- Let the cookies cool slightly on the baking sheet, then roll in powdered sugar while they’re still warm.
- Allow the cookies to cool completely on a wire rack.
Notes
Ensure butter is softened for easier mixing. For more lemon flavor, consider adding more lemon zest or juice.
