Description

Ingredients

  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the yogurt, honey (or maple syrup), lemon juice, lemon zest, and vanilla extract in a mixing bowl. Mix well until smooth.
  2. Fold in the fresh blueberries, being careful not to crush them.
  3. Line a baking sheet with parchment paper to prevent sticking.
  4. Drop clusters of the yogurt mixture onto the prepared baking sheet, creating small mounds.
  5. Freeze for about 120-180 minutes or until fully solid.
  6. Remove from the baking sheet and store in an airtight container in the freezer. Enjoy!
