Ingredients

  • 3 cups fresh arugula
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until it reaches an al dente texture. Drain and rinse under cold water.
  2. Combine the cooked pasta, fresh arugula, halved cherry tomatoes, thinly sliced red onion, and crumbled feta cheese in a large bowl. Gently stir.
  3. Whisk together olive oil, fresh lemon juice, lemon zest, salt, and pepper in a small bowl until well combined.
  4. Pour the dressing over the pasta salad and toss until everything is well coated. Serve immediately or refrigerate until ready to serve.
