  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • Green onions for garnish (optional)

Instructions

  1. Peel and grate the potatoes into a bowl. Squeeze out the excess moisture using a clean kitchen towel or cheesecloth.
  2. In a separate bowl, combine the grated potatoes, shredded cheese, flour, egg, salt, and pepper. Mix until well incorporated.
  3. Heat vegetable oil in a frying pan over medium heat. Scoop spoonfuls of the potato mixture into the pan and flatten slightly. Fry until golden brown, about 3-4 minutes on each side.
  4. Once cooked, remove the pancakes from the pan and let them drain on paper towels. Serve warm, garnished with green onions if desired.
