Description

A warm and hearty Irish stew featuring tender meat, flavorful vegetables, and fluffy cheddar dumplings, perfect for chilly evenings.

Ingredients

Scale
  • 1 lb lamb or beef, cubed
  • 4 cups beef broth
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup butter, melted

Instructions

  1. Browning the meat: In a large pot, brown the meat over medium heat. Add the chopped onions and minced garlic, cooking until both are soft and fragrant, about 5 minutes.
  2. Adding vegetables: Stir in the chopped carrots, diced potatoes, thyme, bay leaf, salt, and pepper. This mix will enhance the stew’s body and flavor.
  3. Simmering the stew: Pour in the beef broth, bring the mixture to a boil, then reduce the heat and allow it to simmer for about 60 minutes.
  4. Preparing the dumplings: While the stew simmers, mix flour, baking powder, and shredded cheddar cheese in a bowl. Stir in milk and melted butter until well combined.
  5. Cooking the dumplings: Drop spoonfuls of the dumpling mixture into the stew. Cover the pot and cook for an additional 15-20 minutes.
  6. Serving: Serve the stew hot in deep bowls with a sprinkle of fresh parsley.

Notes

For a richer flavor, marinate meat overnight. Adjust seasoning to taste before serving.
