Description
A warm and hearty Irish stew featuring tender meat, flavorful vegetables, and fluffy cheddar dumplings, perfect for chilly evenings.
Ingredients
Scale
- 1 lb lamb or beef, cubed
- 4 cups beef broth
- 2 carrots, chopped
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1/4 cup butter, melted
Instructions
- Browning the meat: In a large pot, brown the meat over medium heat. Add the chopped onions and minced garlic, cooking until both are soft and fragrant, about 5 minutes.
- Adding vegetables: Stir in the chopped carrots, diced potatoes, thyme, bay leaf, salt, and pepper. This mix will enhance the stew’s body and flavor.
- Simmering the stew: Pour in the beef broth, bring the mixture to a boil, then reduce the heat and allow it to simmer for about 60 minutes.
- Preparing the dumplings: While the stew simmers, mix flour, baking powder, and shredded cheddar cheese in a bowl. Stir in milk and melted butter until well combined.
- Cooking the dumplings: Drop spoonfuls of the dumpling mixture into the stew. Cover the pot and cook for an additional 15-20 minutes.
- Serving: Serve the stew hot in deep bowls with a sprinkle of fresh parsley.
Notes
For a richer flavor, marinate meat overnight. Adjust seasoning to taste before serving.
