- 8 oz finely chopped chocolate (dark, milk, or dairy-free)
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1 tbsp espresso powder
- 2 tbsp vegan butter or coconut oil
- 8 oz semi-sweet chocolate (for optional coating)
Instructions
- Melt the chocolate in a double boiler or microwave until smooth.
- Warm the cream in a small saucepan until just about to simmer; do not boil.
- Pour the hot cream over the melted chocolate, then add espresso powder and butter. Stir until smooth.
- Cover and refrigerate for about 2 hours or until firm.
- Roll the mixture into small balls using your hands.
- Dip into melted semi-sweet chocolate if desired and place on a lined baking sheet.
- Chill again until firm.
Notes
Store in an airtight container in the fridge for up to one week or freeze for up to three months. Use high-quality chocolate for best flavor.
