- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup honey
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup Greek yogurt
- 1/2 cup chopped pistachios
- Pinch of salt
Instructions
- Preheat your oven to 325°F (160°C) and grease an 8×8 inch baking dish to prevent sticking.
- In a bowl, combine graham cracker crumbs with the melted butter. Mix well until the crumbs are evenly coated. Press this mixture firmly and evenly into the bottom of the prepared baking dish to form the crust.
- In a mixing bowl, beat the softened cream cheese and honey together until smooth and creamy. Add the eggs, vanilla extract, Greek yogurt, and a pinch of salt. Mix until everything is well combined and silky.
- Pour the cream cheese mixture over the crust in your baking dish. Sprinkle the chopped pistachios generously on top. Bake in the preheated oven for 30-35 minutes or until the cheesecake is set in the center. Once baked, let cool completely before refrigerating for at least 2 hours before cutting into bars.
