1 ½ cups old-fashioned rolled oats (certified gluten-free if needed)
½ cup vanilla protein powder (whey or plant-based)
½ cup pumpkin puree (not pumpkin pie filling)
⅓ cup creamy almond butter or peanut butter
¼ cup maple syrup or honey
1 teaspoon vanilla extract
1 ½ teaspoons pumpkin pie spice
1 tablespoon chia seeds or flaxseeds
¼ cup mini chocolate chips (optional)
A pinch of sea salt
Instructions
In a large mixing bowl, whisk together the rolled oats, protein powder, pumpkin pie spice, chia seeds, and a pinch of salt. Ensure the spices and protein powder are evenly distributed through the oats to prevent any clumps.
Add the pumpkin puree, almond butter, maple syrup, and vanilla extract to the bowl with the dry ingredients. Use a sturdy spatula or a wooden spoon to stir everything together. Continue mixing until a thick, sticky dough forms and all the oats are well-coated.
If you are using mini chocolate chips or chopped nuts, fold them into the mixture now. Stir gently so they are evenly spread throughout the dough.
Place the bowl in the refrigerator for about 20 to 30 minutes. This step is important because it allows the oats to soak up some of the moisture, making the dough firmer and much easier to roll into balls.
Scoop about one tablespoon of dough at a time and roll it between your palms to form a ball about one inch in diameter. Repeat this process until all the dough is used. You should end up with approximately 12 to 14 bites.
