  • 1/2 cup rolled oats (old fashioned)
  • 1 scoop vanilla or pumpkin spice protein powder
  • 1/3 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1/4 cup cold brew coffee or a shot of chilled espresso
  • 1 teaspoon chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon maple syrup or a pinch of stevia (optional)
  • A pinch of sea salt

Instructions

  1. In a mason jar or a small sealable container, add the rolled oats, protein powder, chia seeds, pumpkin pie spice, and a pinch of salt. Stir these dry ingredients together first to ensure the protein powder is evenly distributed and doesn’t clump when you add the liquid.
  2. Pour in the almond milk, cold brew coffee, pumpkin puree, and vanilla extract. If you prefer a sweeter breakfast, add your maple syrup or preferred sweetener at this stage. Stir everything vigorously until the mixture is well-combined and no dry pockets of protein powder remain.
  3. Secure the lid on your jar and place it in the refrigerator. Let the oats soak for at least 4 hours, though overnight is best for the creamiest texture. The chia seeds and oats will absorb the liquid and thicken into a delicious consistency.
  4. In the morning, give the oats a quick stir. If they seem too thick, you can splash in a little extra milk. Top with a dollop of Greek yogurt or a sprinkle of pecans before enjoying.
