  • 1/2 cup old-fashioned rolled oats
  • 1 scoop (approx. 30g) vanilla protein powder
  • 1/3 cup pure pumpkin puree (not pumpkin pie filling)
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 shot (approx. 2 oz) cooled espresso or strong brewed coffee
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon maple syrup or stevia (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a wide-mouth mason jar or a small glass container, add the rolled oats, vanilla protein powder, chia seeds, and pumpkin pie spice. Stir these dry components together briefly to ensure the protein powder doesn’t clump later.
  2. Pour in the pumpkin puree, cooled espresso, almond milk, and vanilla extract. If you prefer a sweeter breakfast, add your maple syrup or stevia at this stage.
  3. Use a spoon to stir the mixture vigorously. Ensure that all the oats at the bottom are reached and that the pumpkin puree is fully incorporated into the liquid. The mixture should look like a thick batter.
  4. Seal the container with a lid and place it in the refrigerator. Let the oats soak for at least 4 hours, though overnight (6-8 hours) is best for the creamiest texture and maximum flavor absorption.
  5. In the morning, remove the lid and give the oats another quick stir. If the mixture is too thick, add a splash more milk. Add your favorite toppings and enjoy cold.
