  • 2 cups plain Non-fat or Low-fat Greek Yogurt
  • 1 scoop Vanilla or Berry Whey Protein Powder
  • 2 tablespoons Honey or Pure Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Fresh Strawberries, sliced
  • 1/4 cup Fresh Blueberries
  • 2 tablespoons Chopped Almonds or Pistachios
  • 1 tablespoon Dark Chocolate Chips or Cacao Nibs

Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, protein powder, honey (or maple syrup), and vanilla extract. Use a whisk or a spatula to stir the mixture until it is completely smooth and the protein powder is fully incorporated. Ensure there are no dry clumps remaining for the best texture.
  2. Line a large rimmed baking sheet with parchment paper or a silicone baking mat. This is a crucial step to ensure the yogurt bark doesn’t stick to the pan and can be easily removed once frozen.
  3. Pour the yogurt mixture onto the center of the prepared baking sheet. Using an offset spatula or the back of a large spoon, spread the yogurt into an even layer about 1/4 to 1/2 inch thick. Try to keep the thickness consistent so it freezes and breaks evenly.
  4. Evenly scatter the sliced strawberries, blueberries, chopped nuts, and dark chocolate chips over the top of the yogurt. Gently press down on the larger pieces of fruit with your fingertips to ensure they are slightly embedded in the yogurt, which helps them stay attached when the bark is broken into pieces.
  5. Place the baking sheet flat in the freezer. Let the bark freeze for at least 3 hours, or until it is completely firm and solid to the touch.
  6. Once frozen, lift the parchment paper off the baking sheet. Use your hands to snap the bark into irregular, bite-sized shards, or use a sharp knife to cut it into cleaner squares. Serve immediately or store for later.
