Step 1: Sauté the Aromatics: Heat the olive oil in a large skillet over medium-high heat. Add the diced red onion and bell pepper. Sauté for about 3 to 4 minutes until the vegetables begin to soften and become fragrant.
Step 2: Brown the Turkey: Add the ground turkey to the skillet. Use a wooden spoon or spatula to break the meat into small crumbles. Cook for 5 to 7 minutes, or until the turkey is fully browned and no longer pink.
Step 3: Season the Meat: Sprinkle the chili powder, cumin, garlic powder, onion powder, salt, and pepper over the turkey. Stir well to ensure the meat is evenly coated. Add a splash of water if the mixture seems too dry, and simmer for another 2 minutes to let the flavors meld.
Step 4: Prepare the Base and Beans: While the turkey finishes, warm the black beans and corn in a separate small pot or in the microwave. If you haven’t cooked your rice or quinoa yet, ensure it is ready for assembly.
Step 5: Assemble the Bowls: Divide the cooked rice or quinoa evenly among four bowls. Top each bowl with a portion of the seasoned turkey, black beans, and corn. Add the cherry tomatoes and sliced avocado to each serving.
Step 6: Add Garnish and Serve: Finish each bowl with a dollop of Greek yogurt and a sprinkle of fresh cilantro. Serve with a lime wedge on the side to squeeze over the bowl just before eating.
