  • 2 large salmon fillets (approx. 6 oz each), skin removed and cut into 1-inch cubes
  • 1/4 cup low-sodium soy sauce (or coconut aminos)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, finely grated
  • 2 cloves garlic, minced
  • 1 teaspoon toasted sesame oil
  • 2 cups cooked brown rice or quinoa
  • 1 cup steamed broccoli florets
  • 1/2 cup shelled edamame
  • 1/2 cucumber, thinly sliced
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, thinly sliced (for garnish)

Instructions

  1. In a medium-sized bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil. Place the cubed salmon into the bowl and toss gently to ensure every piece is coated. Let it marinate for at least 10 to 15 minutes while you prepare the other ingredients.
  2. If you haven’t already, cook your brown rice or quinoa according to the package instructions. While the grains are simmering, lightly steam your broccoli florets until they are bright green and tender-crisp. Set these aside and keep them warm.
  3. Heat a large non-stick skillet over medium-high heat. Add a tiny splash of oil if needed. Remove the salmon cubes from the marinade (save the extra liquid!) and place them in the hot pan. Sear the salmon for about 2 to 3 minutes per side until they are golden brown and cooked through. Remove the salmon from the pan and set aside.
  4. Pour the remaining marinade into the same skillet used for the salmon. Bring it to a simmer over medium heat for 1 to 2 minutes until it thickens into a glossy glaze. If you want it thicker, you can mix a teaspoon of cornstarch with a teaspoon of water and whisk it in.
  5. Divide the cooked grains between two bowls. Top each bowl with the seared salmon cubes, steamed broccoli, edamame, and sliced cucumbers. Drizzle the thickened teriyaki glaze generously over the salmon and vegetables.
  6. Finish the bowls by sprinkling sesame seeds and sliced green onions over the top. Serve immediately while warm for the best flavor and texture.
