  1. Whisk the Teriyaki Sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced ginger, and minced garlic. Set this mixture aside. In a separate tiny cup, mix your cornstarch and water until smooth to create the thickening slurry.
  2. Sear the Chicken: Heat the oil in a large skillet or wok over medium-high heat. Add the cubed chicken breast in a single layer. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Ensure there is no pink remaining in the center.
  3. Simmer and Thicken: Reduce the heat to medium. Pour the teriyaki sauce mixture over the cooked chicken in the skillet. Stir to coat. Once the sauce begins to bubble, pour in the cornstarch slurry. Continue to stir for 1-2 minutes until the sauce thickens into a glossy glaze that clings to the chicken.
  4. Prepare the Base and Veggies: While the chicken finishes, ensure your rice is cooked and your broccoli is lightly steamed. The broccoli should be bright green and slightly crisp to provide a nice textural contrast to the soft rice and tender chicken.
