Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/2 cup non-fat plain Greek yogurt
  • 1 scoop (approx. 30g) vanilla protein powder (whey or casein blend works best)
  • 2 tablespoons sugar-free cheesecake instant pudding mix
  • 1 cup fresh strawberries, diced
  • 1–2 tablespoons liquid stevia or honey (optional, to taste)
  • 1 graham cracker, crushed (for optional topping)

Instructions

  1. Step 1: Blend the Base – Place the cottage cheese in a high-speed blender or food processor. Blend on high for 1-2 minutes until the texture is completely smooth and no lumps remain. This is the secret to achieving that “cheesecake” mouthfeel.
  2. Step 2: Incorporate the Protein and Flavor – Transfer the smooth cottage cheese into a medium mixing bowl. Add the Greek yogurt, vanilla protein powder, and the sugar-free cheesecake pudding mix. Use a spatula or whisk to combine everything until the mixture is thick and uniform.
  3. Step 3: Sweeten and Fold – Taste the mixture. If you prefer a sweeter fluff, add your choice of liquid sweetener or stevia now. Once the flavor is to your liking, gently fold in half of the diced strawberries, saving the rest for the top.
  4. Step 4: Chill and Serve – For the best texture, place the bowl in the refrigerator for at least 30 minutes. This allows the pudding mix to set and the flavors to meld. Before serving, top with the remaining strawberries and a sprinkle of crushed graham crackers.
