6 oz sirloin steak or flank steak, sliced into strips
2 large eggs
2 cups fresh baby spinach or kale
1/2 avocado, sliced
1/2 cup cherry tomatoes, halved
1 tablespoon olive oil or avocado oil
1/2 teaspoon garlic powder
Salt and black pepper to taste
Optional: Fresh parsley or red pepper flakes for garnish
Instructions
Season the Steak: Pat the steak strips dry with a paper towel. This helps achieve a better sear. Season the meat generously with salt, black pepper, and garlic powder on all sides.
Sear the Steak: Heat half of the oil in a medium skillet over medium-high heat. Once the pan is hot, add the steak strips. Cook for 2-3 minutes per side until browned and cooked to your preferred level of doneness. Remove the steak from the pan and set it aside to rest.
Sauté the Greens: In the same pan, add the spinach or kale. The residual heat and steak juices will flavor the greens perfectly. Sauté for about 1 minute until just wilted, then move them to your serving bowl.
Cook the Eggs: Wipe the pan quickly if needed and add the remaining oil. Crack the eggs into the pan and cook them sunny-side up, over-easy, or scrambled, depending on your preference. For this bowl, a runny yolk is highly recommended!
Assemble the Bowl: Place the cooked steak on top of the bed of greens. Add the eggs, sliced avocado, and cherry tomatoes. Garnish with fresh parsley or red pepper flakes if you like a little kick.
