2 scoops (approx. 60g) Vanilla or Chocolate Whey Protein Powder
1/2 cup Graham cracker crumbs (about 4–5 full sheets)
1/2 cup Creamy natural almond butter or peanut butter
1/4 cup Pure maple syrup or honey
1/4 cup Unsweetened almond milk (plus more if needed)
1/4 cup Mini marshmallows
1/4 cup Sugar-free dark chocolate chips
1/2 tsp Vanilla extract
A pinch of sea salt
Instructions
Step 1: Prepare the Baking Pan Line an 8×8-inch square baking pan with parchment paper. Leave a little bit of paper hanging over the edges so you can easily lift the bars out once they are set.
Step 2: Combine the Dry Ingredients In a large mixing bowl, whisk together the oat flour, protein powder, half of the graham cracker crumbs, and a pinch of sea salt. Ensure there are no large clumps of protein powder for a smooth texture.
Step 3: Mix the Wet Ingredients Add the almond butter, maple syrup, vanilla extract, and almond milk to the dry mixture. Stir well with a spatula until a thick, cookie-dough-like consistency forms. If the mixture is too dry or crumbly, add almond milk one tablespoon at a time until it holds together.
Step 4: Incorporate the S’mores Elements Gently fold in most of the mini marshmallows and chocolate chips. Reserve a small handful of each to press into the top of the bars for a better presentation.
Step 5: Press into the Pan Transfer the dough into your prepared baking pan. Use a spatula or the bottom of a flat glass to press the mixture down firmly and evenly into the corners. Sprinkle the remaining marshmallows, chocolate chips, and graham cracker crumbs on top, pressing them down so they stick.
Step 6: Chill and Set Place the pan in the refrigerator for at least 30 to 60 minutes. This allows the ingredients to bind together and makes the bars easier to slice into clean squares or rectangles.
Step 7: Slice and Serve Once firm, lift the parchment paper out of the pan. Use a sharp knife to cut the block into 10 even bars. Serve immediately or store for later.
