Ingredients

Scale
  • 4 oz Smoked Salmon, sliced into ribbons
  • 1 cup Cooked Quinoa or Brown Rice
  • 2 Hard-boiled eggs, halved
  • 1 Avocado, sliced
  • 1/2 cup Shelled Edamame, steamed
  • 1/2 Cucumber, sliced into half-moons
  • 1/4 cup Pickled Red Onions
  • 2 tbsp Plain Greek Yogurt
  • 1 tsp Lemon Juice
  • 1/2 tsp Everything Bagel Seasoning
  • Fresh Dill for garnish

Instructions

  1. Start by cooking your quinoa or brown rice according to the package instructions. Once cooked, let it cool slightly or use it chilled. Divide the grains evenly between two serving bowls to create a solid foundation for your toppings.
  2. Place the smoked salmon ribbons on one side of the bowl. Add the two hard-boiled egg halves next to the salmon. This combination provides a massive protein boost and a variety of textures.
  3. Neatly arrange the sliced avocado, steamed edamame, and cucumber slices around the bowl. Adding the pickled red onions in the center provides a pop of color and a bright, acidic contrast to the rich salmon and avocado.
  4. In a small bowl, whisk together the Greek yogurt and lemon juice until smooth. If the mixture is too thick, add a teaspoon of water to reach a drizzling consistency. This healthy dressing adds creaminess without the heavy calories of traditional mayo-based sauces.
  5. Drizzle the yogurt dressing over the bowl. Sprinkle the Everything Bagel seasoning over the avocado and eggs. Finish with a few sprigs of fresh dill for an aromatic touch.
