  • 1 teaspoon fresh lemon juice
  • 1 tablespoon red onion, thinly sliced into half-moons
  • 1 teaspoon non-pareil capers, drained
  • Fresh dill sprigs for garnish
  • A pinch of sea salt and cracked black pepper
  • Optional: Red pepper flakes for heat

Instructions

  1. Place your bread slices in a toaster or under a broiler. Toast until they are golden brown and firm enough to hold the weight of the toppings without bending. Using a sturdy sprouted grain bread provides extra protein and a nutty flavor.
  2. In a small bowl, combine the avocado flesh with the cottage cheese. Use a fork to mash them together until you reach a chunky-smooth consistency. Stir in the lemon juice, salt, and pepper. The cottage cheese melts into the avocado, adding creaminess and a significant amount of protein without changing the flavor too much.
  3. Divide the avocado and cottage cheese mixture evenly between the two slices of toast. Spread it all the way to the edges so every single bite is packed with flavor.
  4. Gently drape the smoked salmon slices over the avocado base. You can fold the salmon into ribbons or “roses” to give the toast a more professional, appetizing appearance.
