High Protein Shrimp Stir Fry Bowl

  • 1.5 lbs large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced into strips
  • 1 cup snap peas
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon minced fresh garlic
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 2 cups cooked brown rice or quinoa
  • Optional: Sesame seeds and sliced green onions for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, and cornstarch. Stir until the cornstarch is fully dissolved and the mixture is smooth. Set this aside to use later.
  2. Heat half of the sesame oil in a large skillet or wok over medium-high heat. Add the shrimp in a single layer. Cook for about 2 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set them aside on a plate.
  3. Add the remaining sesame oil to the same pan. Toss in the broccoli, bell pepper, and snap peas. Stir-fry for 4 to 5 minutes until the vegetables are vibrant in color and tender-crisp. You can add a splash of water if the pan gets too dry.
  4. Return the cooked shrimp to the skillet with the vegetables. Give the sauce a quick stir and pour it over the mixture. Toss everything together for 1 to 2 minutes until the sauce thickens and coats the shrimp and veggies beautifully.
  5. Divide the cooked brown rice or quinoa into four bowls. Top each bowl with a generous portion of the shrimp and vegetable stir fry. Garnish with sesame seeds and green onions if desired.
