High Protein Pumpkin Spice Tiramisu Cups Recipe

  • 8–10 Italian Ladyfingers (Savoiardi)
  • 1 cup non-fat plain Greek yogurt
  • 1/2 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 scoop vanilla whey or casein protein powder
  • 2 tablespoons maple syrup or honey (optional, or use stevia)
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup strong brewed espresso or coffee, cooled
  • 1/2 teaspoon vanilla extract
  • Unsweetened cocoa powder or extra pumpkin spice for dusting

Instructions

  1. In a shallow bowl, combine the cooled espresso (or strong coffee) with the vanilla extract. If you prefer a sweeter base, you can add a drop of liquid stevia or a teaspoon of maple syrup to the coffee. Set this aside to allow the flavors to meld.
  2. In a medium mixing bowl, whisk together the Greek yogurt, pumpkin puree, protein powder, pumpkin pie spice, and your sweetener of choice. Stir vigorously until the mixture is completely smooth and no lumps of protein powder remain. The consistency should be thick and creamy.
  3. Break the ladyfingers in half so they fit easily into your serving cups. Quickly dip each piece into the coffee mixture. Be careful not to let them soak for more than 1-2 seconds per side; if they become too soggy, they will fall apart and lose their cake-like texture.
  4. Place two soaked ladyfinger halves at the bottom of each of the four glass cups. Spread a generous layer of the pumpkin protein mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and a final layer of the pumpkin cream, smoothing the top with a spoon.
  5. For the best results, place the cups in the refrigerator for at least 2 hours, or ideally overnight. This allows the ladyfingers to soften and the flavors to intensify. Just before serving, use a small sieve to dust the tops with unsweetened cocoa powder or a pinch of pumpkin pie spice.
