1 cup pure pumpkin puree (not pumpkin pie filling)
1/2 cup plain non-fat Greek yogurt
2 tablespoons tahini
2 tablespoons fresh lemon juice
2 cloves garlic, peeled and minced
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1 tablespoon olive oil (optional for garnish)

Instructions
Open the can of chickpeas and pour them into a fine-mesh strainer. Rinse them thoroughly under cold water to remove excess sodium and the liquid from the can. For an extra smooth hummus, you can gently pinch the chickpeas to remove the thin outer skins, though this is optional.
In the bowl of a food processor or a blender, combine the rinsed chickpeas, pumpkin puree, Greek yogurt, tahini, lemon juice, minced garlic, cumin, smoked paprika, salt, and pepper. Ensure the lid is securely fastened before starting.
Process the mixture on high for about 1 to 2 minutes. Stop halfway through to scrape down the sides of the bowl with a spatula to ensure every bit is incorporated. Continue blending until the hummus reaches your desired consistency of smoothness.
Taste the hummus and adjust the seasoning if necessary. You might want a little more lemon juice for brightness, another pinch of salt, or a bit more cumin for depth. If the mixture is too thick, you can add a tablespoon of water or olive oil and pulse again.
While the hummus sits to let the flavors meld, wash and slice your vegetables. Cut carrots and cucumbers into rounds or sticks, and slice the bell peppers and celery into easy-to-dip strips.
Transfer the hummus to a serving bowl. Use the back of a spoon to create a small swirl on top. Drizzle with a tiny bit of olive oil and a sprinkle of paprika or toasted pumpkin seeds if desired. Arrange the fresh veggies around the bowl and serve immediately.
