  • 1 cup self-rising flour (extra for dusting)
  • 1 large egg (whisked, for egg wash)
  • 2 tablespoons Everything Bagel seasoning (or sesame seeds)
  • Optional: 1/4 teaspoon salt if your cottage cheese is unsalted

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat. If you aren’t using a non-stick surface, lightly spray the parchment paper with cooking oil to ensure the bagels don’t stick.
  2. For a smoother texture, place the cottage cheese in a blender or food processor and pulse until completely smooth. If you prefer a more rustic bagel with small bits of cheese, you can skip the blending and just use it straight from the container. Transfer the cottage cheese to a medium-sized mixing bowl.
  3. Add the self-rising flour to the bowl with the cottage cheese. Use a sturdy spatula to mix until a shaggy dough forms. Turn the dough out onto a well-floured surface. Knead the dough gently for about 1-2 minutes until it is smooth and no longer sticky. If the dough is too wet, add a tablespoon of flour at a time until it is manageable.
  4. Divide the dough into four equal pieces. Roll each piece into a long rope, about 6-8 inches in length. Join the ends of the rope together to form a circle and pinch them firmly to seal. Place the shaped bagels onto your prepared baking sheet, leaving space between them.
  5. Brush the top of each bagel generously with the whisked egg. This helps the bagels turn a beautiful golden brown and ensures the toppings stick. Sprinkle a liberal amount of Everything Bagel seasoning or your topping of choice over the top of each bagel.
  6. Place the baking sheet in the oven and bake for 22-25 minutes. The bagels should be puffed up and deep golden brown on top. Once finished, remove them from the oven and let them cool on the pan for at least 10 minutes. This cooling period is essential for the interior texture to set properly.
