  • 1 cup old-fashioned rolled oats (gluten-free if needed)
  • 1/2 cup natural creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup vanilla protein powder (whey or plant-based)
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flax seeds
  • 1/4 cup mini dark chocolate chips
  • 1/2 teaspoon vanilla extract
  • 1–2 tablespoons almond milk (only if the mixture is too dry)

Instructions

  1. In a large mixing bowl, add the rolled oats, vanilla protein powder, chia seeds, and ground flax seeds. Stir them together until the protein powder is evenly distributed among the oats.
  2. Add the creamy peanut butter, honey (or maple syrup), and vanilla extract to the bowl. Use a sturdy spatula or a wooden spoon to stir everything together. The mixture should be thick and slightly sticky.
  3. Gently fold in the mini dark chocolate chips. If the dough feels too crumbly and won’t hold its shape when pressed, add almond milk one tablespoon at a time until the desired consistency is reached.
  4. Scoop about one tablespoon of the mixture at a time and roll it between your palms to form a ball roughly 1 inch in diameter. Repeat this process until all the dough is used, which should yield about 12 balls.
  5. Place the energy balls on a plate or a parchment-lined tray. Put them in the refrigerator for at least 30 minutes to firm up. Chilling helps the oats absorb the moisture and improves the overall texture.
