1/2 ripe banana, mashed (or 1/4 cup unsweetened applesauce)
1/2 cup unsweetened almond milk (or milk of choice)
1 tablespoon creamy peanut butter
1 teaspoon dark chocolate chips (optional)
A pinch of sea salt
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or baking dish with a little bit of coconut oil or non-stick cooking spray to ensure the oats don’t stick.
In a medium-sized mixing bowl, combine the blended oats (oat flour), chocolate protein powder, cocoa powder, baking powder, and a pinch of salt. Stir them together until the mixture is uniform in color.
Add the mashed banana and the almond milk to the dry ingredients. Stir everything together until a smooth, cake-like batter forms. Make sure there are no large clumps of protein powder left in the mixture.
Pour about two-thirds of the batter into your prepared baking dish. Drop a large spoonful of peanut butter right into the center. Pour the remaining batter over the top to cover the peanut butter, then sprinkle with chocolate chips if you are using them.
Place the dish in the oven and bake for 22 to 25 minutes. The edges should be firm, but the center should remain slightly soft for that fudgy brownie texture. Remove from the oven and let it cool for a few minutes before eating.
