  • 1 lb 93% lean ground turkey
  • 2 large sweet potatoes, peeled and diced into 1/2 inch cubes
  • 2 tablespoons olive oil, divided
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh baby spinach or chopped kale
  • Optional: Red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with one tablespoon of olive oil and a pinch of salt and pepper on a large sheet pan. Spread them out in a single layer and roast for 20-25 minutes, or until they are tender and slightly browned on the edges. Flip them halfway through the cooking time for even roasting.
  2. While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and bell peppers. Sauté for about 5 to 7 minutes until the onions are translucent and the peppers have softened.
  3. Push the vegetables to the side of the skillet and add the ground turkey. Use a wooden spoon or spatula to break the meat into small crumbles as it cooks. Continue cooking until the turkey is no longer pink, which usually takes about 6 to 8 minutes.
  4. Stir in the minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Mix everything together so the turkey and vegetables are evenly coated with the spices. Cook for another 2 minutes to allow the flavors to meld and the garlic to become fragrant.
  5. Once the sweet potatoes are done roasting, add them directly into the skillet with the turkey mixture. Toss in the baby spinach or kale. Stir gently for 1 to 2 minutes until the greens have just wilted from the residual heat. Remove the skillet from the heat immediately.
  6. Divide the mixture evenly into four airtight meal prep containers. Allow the food to cool slightly before closing the lids and placing them in the refrigerator.
