In a medium bowl, whisk together 1 tablespoon of olive oil, half of the lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken pieces to the bowl and toss until evenly coated. Let the chicken marinate for at least 15 minutes to allow the flavors to penetrate the meat.
While the chicken is marinating, dice the cucumber, halve the cherry tomatoes, and slice the red onion. If you haven’t already, ensure your quinoa or rice is cooked and ready to serve. Set these fresh ingredients aside in separate small bowls or one large platter.
Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken pieces in a single layer. Cook for 6 to 8 minutes, turning occasionally, until the chicken is golden brown and cooked through to an internal temperature of 165°F (74°C).
In a small bowl, mix the Greek yogurt with the remaining lemon juice and a pinch of dried oregano. If the mixture is too thick, add a teaspoon of water at a time until it reaches a drizzling consistency. This acts as a healthy, high-protein alternative to traditional dressing.
Divide the cooked quinoa or rice among four bowls. Top each bowl with a portion of the cooked chicken. Arrange the cucumber, tomatoes, red onion, olives, and feta cheese around the chicken. Drizzle with the yogurt sauce and garnish with fresh parsley.
